You will need: 1 to 2 microwave safe bowls, skillet, non-stick spray.
Prep time: 5 min
Cook Time: 20 min
Ingredients:
1 tsp. light whipped butter or light buttery spread
2.5 TBSP sugar free pakcake syrup
1.5 tablespoons whole-wheat flour
1/4 teaspoon baking powder
1 frozen meatless or turkey sausage patty (one with approx. 80 cals)
1 slice fat-free American Cheese
1/4 cup fat-free liquid egg whites or egg susbsitute
Directions:
To make the pancake batter, place butter in a microwave safe bowl and nuke for 10 seconds, or until melted. Add syrup, flour, and baking powder, and mix thoroughly.
Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add batter to form two small pancakes. Cook until golden brown, 3 to 4 mins per side, flipping carefully. Plate and set aside.
Prepare aptty in a skillet sprayed with nonscitk spray or in the microwave in a microwave safe bowl. (Refer to package instructions for exact temparute and time).
Top one pancake with the sausage patty, followed by the cheese slice. Set aside.
Remove skillet from the heat, re-spray, and return to medium heat. Add egg substitute and allow it to spread out evenly. Do no scramble. Once mostly cooked through, flip and allow it to finish cooking. Gently fold it in half once, and then in half again. Place over the cheese-topped sausage patty, and finish it all off with the remaining pancake. If you like, dunk your chickGriddle in some sugar free syrup. YUM TIME!
