Approximate Nutritional stats (varies based on the protein powder you use):
Yield – 12 Muffins

4g carb
7g protein
.5g fat
1 cup oat flour (only used one cup dry oats, then ground)
2 scoops whey
1 C pumpkin
1/3 C 0% Greek Yogurt
2 tsp pumpkin pie spice
1/4 C baking stevia (optional)
1/2 tsp baking soda
1 TBSP vanilla
1/4 tsp sea salt
5 egg whites
1/2 C water
mix dry ingredients in a bowl, wet in another, combine together.
Bake @ 350 for 20 minutes
