A new, healthier twist on the Lox Sandwich!
This Foxy Lox recipe comes from one of our favorite power foods and clean eats books – The Abs Diet – Eat Right Every Time Guide. It’s a follow up partner book to The Abs Diet, including 789 On the go food choices and and 60 Six Minute Meals , one of which we are about to share with you. This book has been broken in and handled well over the years in our house – Sometimes it’s hard to come up with tasty ideas, and between the few good clean recipe books we have, there is always something that sounds good to us.
So here it is, in it’s most simple form: FOXY LOX Breakfast Sandwhich!
2 Tablespoons part-skim ricotta cheese (usually would be cream cheese)
1 toasted whole-wheat English Muffin
1 slice tomato
1 ounc smoked salmon
A few red onion rings (optional)
Spread cheese over each muffin half, top with tomato and salmon.
Pretty tricky, eh? 😀
