This super easy recipe comes to us from Becca’s friend Stephanie. Stephanie competes in bikini on the National level and this girl doesn’t mess around!! 😛
Pumpkin is known for being high in fiber and low in sugar, but still giving lots of flavor. 1/2 a cup of pumpkin is only 40 calories and 9 carbs, 5 of which are fiberous which leaves you only 4 net carbs! One can of pumpkin is 4 servings…so this entire recipe, plus 2 5o calorie apples will make a small dent in your carb and sugar intake.
Simply put 5lbs chicken breast in a crock pot with water, add 1 can pumpkin puree, 2 apples (diced), 5 packets stevia, pinch of salt, cinnamon, pumpkin pie spice, allspice and nutmeg… to taste…(don’t go overboard on those fall spices!)
And 10 hours later = YUM!
The breasts cook and fall apart like shredded pork, and you have a fall treat that won’t bust your belt.
